Preparation
- Preheat the oven to 350°F (175°C).
- In a skillet over medium heat, melt the butter and brown sugar together. Add the sliced peaches and cook for about 5 minutes until tender and caramelized. Remove from heat.
- Grease a 12-cup muffin tin. Divide the caramelized peaches into the bottom of each muffin cup.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
- In another bowl, combine the milk, egg, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Spoon the batter over the caramelized peaches in the muffin tins, filling each cup about 3/4 full.
- Bake for about 20-25 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
- Once baked, let them cool in the muffin tin for 5 minutes before inverting onto a wire rack. Serve warm or at room temperature.
Notes
Store in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze wrapped cakes for up to 2 months. Thaw at room temperature or reheat in the oven at 350°F for about 10 minutes.
