Preparation
- Preheat the oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, combine the sliced peaches, ½ cup of sugar, lemon juice, and ground cinnamon. Toss them gently and let the mixture sit for about 10-15 minutes.
- In another bowl, whisk together the flour, remaining sugar, baking powder, and salt. Stir in the milk and melted butter until well combined.
Assembly
- Spoon a tablespoon of the batter into the bottom of each muffin tin cup.
- Spoon the peach mixture on top, dividing it evenly among the cups.
- Dollop some remaining batter over the top of the peaches.
Baking
- Bake in the preheated oven for 25-30 minutes, or until golden brown and a toothpick comes out clean.
- Allow to cool for a few minutes before removing from the muffin tin.
- Serve warm with a scoop of vanilla ice cream on the side, if desired.
Notes
Use fresh peaches for the best flavor. You can also add nuts or experiment with spices like nutmeg or cardamom.
