Preparation
- In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, diced jalapenos, chopped green onions, salt, and pepper. Mix until well combined to create a creamy filling.
Assembly
- Lay an egg roll wrapper on a clean surface, with one corner pointing toward you. Place about a tablespoon of the filling in the center. Fold the bottom corner over the filling, then fold in the side corners, and roll tightly toward the top corner to seal. Use a bit of water on your fingers to help seal the edges if needed.
Cooking
- In a deep frying pan or pot, heat enough oil to cover the egg rolls about halfway. Heat over medium-high heat until hot (around 350°F).
- Carefully place the egg rolls in the hot oil, a few at a time, ensuring not to overcrowd the pan. Fry for about 3-4 minutes on each side until golden brown and crispy.
- Remove the egg rolls with a slotted spoon and place them on a plate lined with paper towels to drain excess oil. Serve warm with your choice of dipping sauce!
Notes
You can personalize these egg rolls with savory toppings like guacamole, sour cream, or fresh salsa. Store leftovers in an airtight container for 3-5 days. Reheat in the oven to maintain crispiness.
