Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup milk or substitute with almond milk for lactose intolerance
  • 1/4 cup butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
For Serving
  • Powdered sugar for dusting

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, mix the melted butter, milk, eggs, and vanilla extract until well combined.
  4. Gradually add the wet mixture to the dry ingredients, stirring lightly until just combined. Be careful not to over-mix; a few lumps are fine.
  5. Lightly grease a mini muffin tin and pour the batter into the cups, filling them about 2/3 full.
Baking
  1. Place the muffin tin in the oven and bake for 15-20 minutes, or until the tops are golden brown and a toothpick inserted in the middle comes out clean.
  2. Remove from the oven and let them cool for a few minutes. Dust generously with powdered sugar just before serving.

Notes

For best results, avoid overmixing the batter and keep an eye on the baking time to prevent dryness. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to a month.
