Ingredients
  

Dry Ingredients
  • 1.5 cups all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cup sugar
Wet Ingredients
  • 0.5 cup unsalted butter, melted Can substitute with coconut oil or Halal-friendly margarine
  • 1 large egg
  • 1 teaspoon vanilla extract
Mix-ins
  • 0.5 cup mini chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the flour, baking powder, baking soda, salt, and sugar. Whisk them together until well mixed.
  3. In a separate bowl, mix the melted butter, egg, and vanilla extract until combined.
  4. Pour the wet mixture into the dry mixture and stir gently until just combined, being careful not to overmix.
  5. Fold in the mini chocolate chips until evenly distributed.
  6. Line a mini muffin tin with paper liners or spray with non-stick cooking spray.
  7. Spoon the batter into the mini muffin cups, filling each about ¾ full.
Baking
  1. Place the muffin tin in the preheated oven and bake for about 12-15 minutes or until a toothpick inserted in the center comes out clean.
  2. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Store muffins in an airtight container at room temperature for up to 3 days or freeze them wrapped in plastic wrap for up to 3 months.
