Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the flour, baking powder, baking soda, salt, and sugar. Whisk them together until well mixed.
- In a separate bowl, mix the melted butter, egg, and vanilla extract until combined.
- Pour the wet mixture into the dry mixture and stir gently until just combined, being careful not to overmix.
- Fold in the mini chocolate chips until evenly distributed.
- Line a mini muffin tin with paper liners or spray with non-stick cooking spray.
- Spoon the batter into the mini muffin cups, filling each about ¾ full.
Baking
- Place the muffin tin in the preheated oven and bake for about 12-15 minutes or until a toothpick inserted in the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Store muffins in an airtight container at room temperature for up to 3 days or freeze them wrapped in plastic wrap for up to 3 months.
