Ingredients
  

For the Pie Crust
  • 2 cups all-purpose flour Can substitute with whole wheat flour for a healthier option.
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 cup unsalted butter, chilled and diced
  • 6 to 8 tablespoons ice water Adjust as needed to bring dough together.
For the Apple Filling
  • 4 cups apples, peeled, cored, and sliced
  • 3/4 cup sugar Can substitute with honey or maple syrup.
  • 1 teaspoon ground cinnamon
  • 2 tablespoons lemon juice
  • 1 tablespoon butter, diced For topping.

Method
 

Preparation of Pie Crust
  1. In a large bowl, mix flour, salt, and sugar. Add the chilled, diced butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
  2. Slowly add in the ice water, a tablespoon at a time, mixing until the dough comes together. Divide the dough in half, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Making the Apple Filling
  1. In another bowl, combine sliced apples with sugar, cinnamon, and lemon juice. Toss until the apples are well-coated.
Assembly and Baking
  1. Preheat your oven to 375°F (190°C). Roll out one dough half on a floured surface until it’s about 1/8 inch thick. Use a round cutter to cut circles out of the dough that will fit your mini pie molds.
  2. Place the dough circles into the pie molds. Fill each with the apple mixture and add a small piece of butter on top.
  3. Roll out the second half of the dough and create smaller circles for the tops of the pies. Place them over the filled molds and pinch the edges to seal.
  4. Bake for 25-30 minutes or until the crust is golden brown. Let them cool slightly before serving.

Notes

Store in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months. Reheat in the oven at 350°F (175°C) for about 10-15 minutes.
