Main Ingredients
  • 3 cups cooked chicken, shredded Tender chicken, preferably leftover or rotisserie.
  • 1 cup sour cream Provides creaminess.
  • 1 cup cream of chicken soup Adds flavor and moisture.
  • 1 cup mixed vegetables Peas and carrots work well.
  • 1 cup shredded cheese Cheddar works best.
Topping Ingredients
  • 2 cups crushed crackers Can substitute with breadcrumbs.
  • 1 tsp garlic powder For seasoning.
  • 1 tsp onion powder For flavoring.

Method
 

Preparation and Cooking
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, sour cream, cream of chicken soup, mixed vegetables, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Pour the chicken mixture into a greased 9x13-inch baking dish and spread it evenly.
  4. Sprinkle half of the shredded cheese over the chicken mixture.
  5. In a separate bowl, combine the crushed crackers with a little melted butter. Sprinkle over the casserole, followed by the remaining cheese.
  6. Bake for 30-40 minutes or until bubbly and golden brown on top.
  7. Let it cool for a few minutes before serving.

Notes

Consider serving with a garden salad or steamed green beans. Use stale crackers for the topping to avoid sogginess.
