Ingredients
  

For the Kebabs
  • 14 oz firm tofu Press to remove excess moisture
  • 1 tablespoon olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • Salt and pepper To taste
  • Skewers Soaked in water if wooden

Method
 

Preparation
  1. Start by pressing the tofu to remove excess moisture. Wrap it in a clean kitchen towel and place a heavy object on top for about 15 minutes.
  2. In a mixing bowl, combine olive oil, soy sauce, lemon juice, cumin, coriander, paprika, salt, and pepper. Cut the pressed tofu into bite-sized cubes and toss them in the marinade. Let the tofu soak in these flavors for at least 15 minutes.
  3. Preheat your grill or grill pan on medium heat. While it's heating, thread the marinated tofu cubes onto soaked skewers, leaving a little space between each piece.
Cooking
  1. Place the kebabs on the grill and cook for about 10-12 minutes, turning frequently until they’re golden and crispy on all sides.
Serving
  1. Enjoy your kebabs hot off the grill. Serve with your choice of sauce, such as tahini or a sprinkle of fresh herbs.

Notes

Tips for perfecting: Try substituting firm tofu with tempeh for a nuttier flavor or use vegetables like bell peppers and zucchini for a colorful veggie version. Marinating longer enhances flavor. Ensure proper pressing of tofu to avoid sogginess.
