Ingredients

For the Cookie
  • 1 tablespoon butter Melted
  • 1 tablespoon granulated sugar
  • 1 tablespoon brown sugar
  • 1/4 teaspoon vanilla extract
  • 1 large egg yolk Discard the white
  • 3 tablespoons all-purpose flour
  • 1 tablespoon chocolate chips
  • a pinch salt

Method

Preparation
  1. In your favorite microwave-safe mug, add 1 tablespoon of butter. Microwave for about 20 seconds until melted. Let it cool for a moment.
  2. Stir in 1 tablespoon of granulated sugar and 1 tablespoon of brown sugar with the melted butter until well combined.
  3. Use a fork to add your egg yolk (discard the white) to the mug. Mix it until creamy and smooth.
  4. Add in 1/4 teaspoon of vanilla extract, stirring well into the mixture.
  5. Gradually sprinkle in 3 tablespoons of all-purpose flour and a pinch of salt. Mix until just combined — be careful not to overmix!
  6. Fold in 1 tablespoon of chocolate chips to complete your dough.
  7. Pop your mug in the microwave and cook on high for 40-60 seconds. Start checking at the 40-second mark; you want it chewy, not tough!
  8. Once done, let it cool for a moment (it’ll be hot!) before digging in. Go ahead, add a scoop of ice cream if you’re feeling fancy!

Notes

To achieve a flawless Microwave Mug Cookie, consider these tips: If you're out of butter, coconut oil or a vegan butter alternative works great! Adjust the microwave time based on your appliance; every microwave is slightly different. Keep an eye on the cookie as it cooks. You want a soft center, so take it out as soon as it looks set but still slightly gooey. This cookie is best enjoyed fresh, but you can refrigerate it for up to two days if you have leftovers. To reheat, simply pop the cookie back in the microwave for about 10-15 seconds until warmed.
