Ingredients
  

For the Mochi
  • 1 cup mochiko (sweet rice flour)
  • 1/2 cup sugar
  • 1 cup water
  • 1 cup mango puree (or mashed ripe mango) Use ripe mango for the best flavor.
  • Cornstarch (for dusting) Use as needed for dusting.
Optional Filling
  • Mango chunks For filling, optional.

Method
 

Preparation
  1. In a large mixing bowl, combine the mochiko and sugar. Stir them together until well mixed.
  2. Gradually pour in the water, mixing until you have a smooth batter with no lumps.
  3. Fold in your mango puree until well incorporated.
Cooking
  1. Cover the bowl with plastic wrap or a microwave-safe lid. Microwave on high for about 1-2 minutes.
  2. Take it out, stir, and return it for another 1-2 minutes. Repeat this process until the mixture becomes firm and shiny.
Shaping & Filling
  1. Prepare a clean surface dusted with cornstarch. Pour the mochi dough onto it, dust your hands with cornstarch, and knead until it’s cool enough to handle.
  2. Divide the mochi into small pieces and place a mango chunk inside each piece before sealing them up neatly.
Serving
  1. Allow the mochi to cool completely. Your Microwave Mango Mochi is now ready to be enjoyed!

Notes

For flavor variations, you can swap out mango for other fruits like strawberries or matcha powder. Adding a little coconut milk to the dough introduces extra creaminess. Watch your mochi while it cooks to prevent overcooking which can create a rubbery texture. Store in an airtight container in the refrigerator for up to 3 days or freeze individually wrapped pieces for up to a month.
