Main Ingredients
  • 10 pieces corn tortillas
  • 2 cans black beans, drained and rinsed
  • 2 cups salsa
  • 1 cup corn (frozen or fresh)
  • 2 cups shredded cheese (cheddar or Mexican blend)
Spices & Seasoning
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste Salt and pepper
Garnish
  • to taste Fresh cilantro For garnish (optional)

Method
 

Preparation
  1. Preheat the Oven: Set your oven to 350°F (175°C) to get it hot and ready for your casserole!
  2. Prepare the Baking Dish: Lightly grease a 9x13 inch baking dish to prevent sticking.
Layering
  1. Start with a layer of tortillas; place 3 to 4 tortillas on the bottom. Overlap them slightly if needed.
  2. Spread half of the black beans over the tortillas. Sprinkle with cumin, chili powder, salt, and pepper.
  3. Spoon half of the salsa over the beans, followed by half of the corn.
  4. Add a single layer of cheese on top of the salsa.
  5. Repeat the layering process until all ingredients are used up, finishing with a top layer of cheese.
Baking
  1. Place the casserole in the oven and let it bake for 20-25 minutes, or until the cheese is melted and bubbly.
  2. Remove from the oven and allow to rest for 5 minutes before serving.
Serving
  1. Top with fresh cilantro if desired and serve!

Notes

Cooked casserole can be stored in an airtight container in the refrigerator for up to 3-4 days. To reheat, microwave portions or place them back in a preheated oven at 350°F for about 15 minutes. Can be frozen for 2-3 months.
