Preparation
- Preheat the Oven: Set your oven to 350°F (175°C) to get it hot and ready for your casserole!
- Prepare the Baking Dish: Lightly grease a 9x13 inch baking dish to prevent sticking.
Layering
- Start with a layer of tortillas; place 3 to 4 tortillas on the bottom. Overlap them slightly if needed.
- Spread half of the black beans over the tortillas. Sprinkle with cumin, chili powder, salt, and pepper.
- Spoon half of the salsa over the beans, followed by half of the corn.
- Add a single layer of cheese on top of the salsa.
- Repeat the layering process until all ingredients are used up, finishing with a top layer of cheese.
Baking
- Place the casserole in the oven and let it bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and allow to rest for 5 minutes before serving.
Serving
- Top with fresh cilantro if desired and serve!
Notes
Cooked casserole can be stored in an airtight container in the refrigerator for up to 3-4 days. To reheat, microwave portions or place them back in a preheated oven at 350°F for about 15 minutes. Can be frozen for 2-3 months.
