- Gather all your ingredients. Chop onions, tomatoes, and cilantro, and have your cooked chorizo or ground beef ready.
- In a medium bowl, crack the large eggs and add the milk. Season with salt and pepper. Whisk until fluffy.
Cooking
- In a large skillet over medium heat, add the cooked chorizo or ground beef. Stir until heated through.
- Add the chopped onions and cook for about 2-3 minutes until they become translucent.

Assembly
- Lay a large tortilla flat on a plate. Spoon about 1/4 of the egg and meat mixture into the center and top it with diced tomatoes, cheese, and cilantro.
- Fold the sides of the tortilla over the filling, then roll it up from the bottom to seal your burrito. Repeat this for the remaining tortillas.
Serving
