  • 2 pieces ripe avocados Ensure they are slightly soft to the touch.
  • 1 cup cooked shrimp, chopped
  • 1/2 cup tomatoes, diced
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, diced
  • 1-2 tablespoons hot sauce Adjust to taste.

Preparation
  1. Cut the avocados in half and remove the pit. Use a spoon to gently scoop out a small part of the flesh.
  2. In a mixing bowl, combine the chopped shrimp, diced tomatoes, cucumber, red onion, and hot sauce.
  3. Add salt, pepper, and a splash of lime juice to the mixture. Stir well to combine all ingredients.
  4. Spoon the shrimp mixture into each avocado half generously.
  5. Serve immediately to enjoy fresh for maximum flavor and texture.

Notes

Choose ripe avocados and customize your filling by adding ingredients like corn or jalapeƱos. Best enjoyed fresh but can be stored for one day in the fridge with lime juice to prevent browning.
