- In a large skillet over medium heat, add the chopped onion and minced garlic to a tablespoon of oil. Sauté until the onion becomes translucent.
- Add the ground beef to the skillet and break it apart with a wooden spoon. Cook until it's browned, ensuring you stir frequently to cook it evenly.
- Once the beef is cooked, mix in the chopped bell pepper, diced tomatoes, and potatoes. Let everything simmer for about 5-7 minutes until the vegetables start to soften.
- Stir in the raisins, olives, cumin, and oregano. Don’t forget to season with salt and pepper to suit your taste.
- Reduce the heat to low, cover the skillet, and let it cook for an additional 10-15 minutes. This allows all the flavors to meld together beautifully.
- Once everything is cooked, take it off the heat and garnish with freshly chopped cilantro. Serve it warm alongside rice, tortillas, or a simple salad.
Notes
