  • 1 lb ground beef Can substitute with ground turkey or chicken for a leaner option.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium bell pepper, chopped
  • 2 medium tomatoes, diced
  • 1 cup diced potatoes Avoid overcooking; should be tender but not mushy.
  • 1/2 cup raisins
  • 1/4 cup olives, sliced
  • 1 tsp cumin
  • 1 tsp oregano
  • to taste Salt and pepper
  • 1/4 cup chopped cilantro (for garnish) Freshly chopped for serving.

Preparation
  1. In a large skillet over medium heat, add the chopped onion and minced garlic to a tablespoon of oil. Sauté until the onion becomes translucent.
  2. Add the ground beef to the skillet and break it apart with a wooden spoon. Cook until it's browned, ensuring you stir frequently to cook it evenly.
  3. Once the beef is cooked, mix in the chopped bell pepper, diced tomatoes, and potatoes. Let everything simmer for about 5-7 minutes until the vegetables start to soften.
  4. Stir in the raisins, olives, cumin, and oregano. Don’t forget to season with salt and pepper to suit your taste.
  5. Reduce the heat to low, cover the skillet, and let it cook for an additional 10-15 minutes. This allows all the flavors to meld together beautifully.
  6. Once everything is cooked, take it off the heat and garnish with freshly chopped cilantro. Serve it warm alongside rice, tortillas, or a simple salad.

Notes

To store leftovers, keep in an airtight container in the refrigerator for up to 3 days or freeze in a freezer-safe container for up to 3 months. Reheat in a skillet over low heat or in the microwave with a splash of water or broth.
