  • 1 lb ground turkey
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 2 cups cooked rice
  • 1 tablespoon olive oil
  • to taste salt and pepper
  • Chopped cilantro for garnish

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Heat olive oil in a large skillet over medium heat. Add ground turkey, breaking it up, and cook until no longer pink.
  3. Stir in taco seasoning, adding salt and pepper to taste.
  4. Add black beans, corn, and diced tomatoes. Stir until well combined.
  5. Fold in cooked rice into the mixture.
  6. Pour the turkey mixture into a greased casserole dish and sprinkle shredded cheese on top.
  7. Bake in the preheated oven for about 20-25 minutes until cheese is bubbly and golden brown.
  8. Remove from the oven, sprinkle with chopped cilantro, and serve warm.

Notes

Substitute ground turkey for ground chicken or mix beans for extra protein. Broil for 2-3 minutes for extra crispy cheese. Rinse canned ingredients to reduce sodium.
