Preparation
- Preheat the oven to 350°F (175°C).
- Heat olive oil in a large skillet over medium heat. Add ground turkey, breaking it up, and cook until no longer pink.
- Stir in taco seasoning, adding salt and pepper to taste.
- Add black beans, corn, and diced tomatoes. Stir until well combined.
- Fold in cooked rice into the mixture.
- Pour the turkey mixture into a greased casserole dish and sprinkle shredded cheese on top.
- Bake in the preheated oven for about 20-25 minutes until cheese is bubbly and golden brown.
- Remove from the oven, sprinkle with chopped cilantro, and serve warm.
Notes
Substitute ground turkey for ground chicken or mix beans for extra protein. Broil for 2-3 minutes for extra crispy cheese. Rinse canned ingredients to reduce sodium.
