  • 2 pieces chicken breasts Ensure chicken is clean and trimmed of excess fat.
  • 1/4 cup olive oil Use high-quality olive oil for best flavor.
  • 1/4 cup lime juice Freshly squeezed lime juice is recommended.
  • 3 cloves garlic, minced Adjust quantity to taste if desired.
  • 1 teaspoon chili powder Add more for extra heat.
  • 1 teaspoon cumin Adds earthy flavor.
  • 1 teaspoon paprika For smokiness and color.

Method
 

Preparation
  1. Prep the chicken by ensuring the chicken breasts are clean and trimmed of any excess fat.
  2. In a bowl, combine olive oil, lime juice, minced garlic, chili powder, cumin, paprika, salt, and pepper. Whisk together until well combined.
Marination
  1. Place the chicken breasts in a resealable bag or a shallow dish. Pour the marinade over the chicken, ensuring it's completely coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes or ideally several hours.
Cooking
  1. Preheat your grill or skillet on medium-high heat. Remove the chicken from the marinade (discard any leftovers) and cook thoroughly—approximately 6-8 minutes per side, depending on thickness. Ensure the internal temperature reaches 165°F (75°C).
  2. Once cooked, allow the chicken to rest for a few minutes before slicing. Garnish with fresh cilantro and serve with your favorite sides.

Notes

For optimal flavor, marinate chicken for at least 30 minutes, or overnight if possible. Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to 3 months.
