Ingredients

For the dough
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 3/4 cup warm water
For the filling
  • 1 cup cooked and seasoned vegetables (like spinach, corn, or your favorite mix)
  • 1/2 cup shredded mozzarella cheese (or a halal cheese alternative)
Optional toppings
  • sour cream
  • sriracha
  • fresh herbs (like cilantro or parsley)

Method

Preparation
  1. In a mixing bowl, combine all-purpose flour, baking powder, and salt.
  2. Add olive oil and warm water gradually, mixing until a soft dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until it’s smooth and elastic.
Assembly
  1. Divide your dough into equal portions, then roll each piece into a flat round shape around 1/4 inch thick.
  2. Place a generous spoonful of the cooked vegetables and shredded cheese in the center of each round.
  3. Fold the dough over to cover the filling and pinch the edges tightly to seal, forming a little pouch.
Cooking
  1. Heat a non-stick skillet over medium heat and lightly grease it with oil.
  2. Cook each sneaker for about 5-7 minutes on each side until golden brown and crispy.
Serving
  1. Serve warm with your choice of toppings.

Notes

For a spicier kick, consider adding chopped jalapeños or green chili to the vegetable filling. Store leftovers in an airtight container for up to 3 days.
