  • - 1 teaspoon dried thyme
  • - 1 teaspoon dried rosemary
  • #### **For the Au Jus**
  • - 4 cups beef broth preferably low-sodium
  • - 1 small onion quartered
  • - 2 cloves garlic smashed
  • - 1 bay leaf
  • - 1 tablespoon Worcestershire sauce
  • - Salt and pepper to taste
  • #### **For Assembling**
  • - 4 French or Italian rolls split horizontally
  • - Optional: Sliced provolone or mozzarella cheese

  • #### **Step 1: Prepare and Roast the Beef**
  • Preheat your oven to **325°F (165°C)**. Rub the beef roast with olive oil, salt, pepper, garlic powder, onion powder, thyme, and rosemary. Place in a roasting pan and cook in the oven for **2½ to 3 hours**, or until the internal temperature reaches **195°F (90°C)** for tender, pull-apart meat. Let the beef rest for **15 minutes** before slicing thinly.

  • While the beef is roasting, combine the beef broth, quartered onion, garlic, bay leaf, and Worcestershire sauce in a small saucepan. Bring to a simmer over medium heat and let cook for **15-20 minutes**. Strain the broth, adjust seasoning with salt and pepper, and keep warm.
  • #### **Step 3: Assemble the Sandwiches**
  • Place a generous layer of sliced beef on the bottom half of each roll. If desired, add a slice of provolone or mozzarella cheese. Drizzle plenty of hot au jus over the beef. Cap with the top half of the roll.
