  • 2 medium zucchinis Select firm zucchinis without blemishes.
  • 1 cup ricotta cheese
  • 1/2 cup feta cheese, crumbled You can substitute with goat cheese if desired.
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup olives, chopped
  • 2 tablespoons fresh basil, chopped
  • to taste Salt and pepper
  • to drizzle Olive oil For garnishing.

Method
 

Preparation
  1. Begin by washing the zucchinis. Slice them lengthwise into thin strips (about 1/4 inch thick) using a sharp knife or mandoline.
  2. In a grill pan or skillet over medium heat, lightly grill the zucchini strips for 1-2 minutes on each side until they are just tender but still hold their shape. Set aside to cool.
  3. In a mixing bowl, combine the ricotta cheese, crumbled feta, chopped sun-dried tomatoes, chopped olives, and fresh basil. Add salt and pepper to taste and mix until well combined.
  4. Taking a slice of zucchini, place a spoonful of the cheese mixture on one end and roll it up gently. Place the roll seam-side down on a baking dish, continuing this process until you finish all the zucchini strips and filling.
  5. Drizzle olive oil over the assembled rolls and bake at 375°F (190°C) for about 15 minutes until warmed through.
  6. Once done, allow to cool slightly. Serve warm and enjoy the burst of Mediterranean flavors!

Notes

Choose fresh zucchini for the best flavor. Experiment with swapping out ingredients for different flavors. Don't overcook the zucchini while grilling.
