Mediterranean White Bean Soup: A Cozy Comfort in a Bowl

When the cold weather rolls in, there's nothing quite as comforting as a warm bowl of soup. One of my all-time favorites is the Mediterranean White Bean Soup, which is not only creamy and hearty but also brimming with healthy ingredients.

Ingredients
  

  • 1 yellow onion 2 cups diced
  • 2 carrots 1 cup diced
  • 1-2 celery ribs 3/4-1 cup diced
  • 3-4 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 teaspoons Italian seasoning blend
  • 1/4-1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4-5 cups vegetable broth or chicken broth
  • 2 cans white beans like cannellini, 14.5/15 oz each
  • 1 parmesan cheese rind optional
  • 1/2 cup freshly grated parmesan cheese for topping
  • Fresh rosemary and/or parsley for topping

Instructions
 

  • Sauté the Vegetables: In a large pot, heat the olive oil and butter over medium heat. Add the diced yellow onion, carrots, and celery. Sauté until softened, about 5 to 7 minutes, enjoying the lovely aromas!
  • Add Garlic and Seasoning: Stir in the minced garlic along with the Italian seasoning blend. Cook for an additional minute, letting the flavors meld together.
  • Add Broth and Beans: Pour in the vegetable or chicken broth and bring to a boil. Add in the white beans and the parmesan cheese rind (if using). Reduce the heat and let it simmer for 20 minutes.
  • Season and Serve: Season with salt and black pepper to taste. Remove the cheese rind before serving, and ladle the soup into bowls. Top with freshly grated parmesan cheese and a sprinkle of chopped rosemary or parsley for that finishing touch.
