  • 1 cup feta cheese, crumbled Can be substituted with goat cheese for a different twist.
  • 1 cup cucumber, diced
  • ¼ cup red onion, finely chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • ¼ cup fresh mint leaves, chopped Using fresh herbs enhances the flavor.

Method
 

Preparation
  1. Cut the watermelon into bite-sized cubes and place them in a large mixing bowl.
  2. Dice the cucumber and finely chop the red onion, then add them to the bowl with the watermelon.
  3. Crumble the feta cheese over the watermelon mixture.
  4. In a small bowl, whisk together olive oil and lemon juice, then drizzle it over the salad.
  5. Sprinkle with chopped mint, salt, and pepper, then gently toss everything together.
  6. Serve the salad cold, garnished with extra mint leaves if desired.

Notes

Chill the salad for about 30 minutes before serving to allow the flavors to meld. This salad is best enjoyed fresh but can be stored in an airtight container in the refrigerator for 2-3 days. Add dressing just before serving to maintain crispness.
