Ingredients
  

For the Sandwich
  • 2 slices slices of bread Whole grain recommended for added flavor
  • 1 cup fresh spinach Washed and dried
  • 1/4 cup feta cheese Crumpled
  • 1/4 cup mozzarella cheese Shredded
  • 1 tablespoon olive oil For grilling
  • to taste salt and pepper To season

Method
 

Preparation
  1. Start by laying out two slices of your chosen bread on a clean surface.
  2. In a small bowl, combine the crumbled feta cheese and shredded mozzarella.
  3. Heat your olive oil in a small pan over medium heat. Once it's warm, add the fresh spinach and cook for about 2-3 minutes until wilted. Season with a pinch of salt and pepper to taste.
  4. Spread the wilted spinach evenly on one slice of bread, followed by the cheesy mixture. Top with the other slice of bread to create your sandwich.
Cooking
  1. In the same pan, place your assembled sandwich and grill for about 3-4 minutes on each side, or until golden brown and the cheese is gooey. Press down gently with a spatula to help with the melting.
  2. Once cooked, remove from the pan, slice in half, and dig in!

Notes

Feel free to experiment with different types of bread, such as ciabatta or sourdough. Also, consider adding more vegetables like bell peppers or sun-dried tomatoes for an extra punch of flavor.
