Preparation
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the chopped spinach, crumbled feta, and softened cream cheese. Season with salt and pepper to taste. Mix until well-combined.
- Lay out the thawed phyllo dough sheets on a clean surface. Brush a thin layer of olive oil on the first sheet. Place a second sheet on top and brush again with olive oil.
Assembly
- Take a generous tablespoon of the spinach-feta mixture and place it near one edge of the phyllo stack. Carefully fold the sides of the dough over the filling and roll it up tightly, forming a cigar shape.
Baking
- Place the rolled crisps on a baking sheet lined with parchment paper. Brush the tops lightly with more olive oil.
- Bake for 20-25 minutes or until golden brown and crispy.
- Once finished, remove from the oven and let cool slightly before serving.
Notes
Store in an airtight container in the refrigerator for up to 3 days, or freeze before baking for up to 2 months. To reheat, bake at 375°F (190°C) for 15-20 minutes if frozen.
