Mediterranean Spinach and Feta Crisps

Ingredients
  

Filling
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup cream cheese, softened
Crisp Base
  • 1/2 cup phyllo dough, thawed
  • 1/4 cup olive oil For brushing
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the chopped spinach, crumbled feta, and softened cream cheese. Season with salt and pepper to taste. Mix until well-combined.
  3. Lay out the thawed phyllo dough sheets on a clean surface. Brush a thin layer of olive oil on the first sheet. Place a second sheet on top and brush again with olive oil.
Assembly
  1. Take a generous tablespoon of the spinach-feta mixture and place it near one edge of the phyllo stack. Carefully fold the sides of the dough over the filling and roll it up tightly, forming a cigar shape.
Baking
  1. Place the rolled crisps on a baking sheet lined with parchment paper. Brush the tops lightly with more olive oil.
  2. Bake for 20-25 minutes or until golden brown and crispy.
  3. Once finished, remove from the oven and let cool slightly before serving.

Notes

Store in an airtight container in the refrigerator for up to 3 days, or freeze before baking for up to 2 months. To reheat, bake at 375°F (190°C) for 15-20 minutes if frozen.
