Ingredients
  

For the Marinade
  • 2 tablespoons olive oil
  • 1 lemon juiced Freshly squeezed for best flavor
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano Can substitute with fresh herbs
  • 1 teaspoon paprika
  • to taste Salt and pepper
Main Ingredients
  • 4 fillets salmon Fresh or thawed
  • 1 cup cherry tomatoes, halved
  • 1 cup Kalamata olives, pitted and sliced Can substitute with green olives

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix the olive oil, lemon juice, minced garlic, dried oregano, paprika, salt, and pepper.
  3. Place the salmon fillets on a baking sheet lined with parchment paper, and pour the marinade over the fillets, making sure they are well-coated. Allow them to marinate for about 10 minutes.
  4. Scatter the halved cherry tomatoes and sliced Kalamata olives around the salmon on the baking sheet.
Cooking
  1. Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  2. Remove from the oven, let it rest for a couple of minutes, then drizzle with more lemon juice and sprinkle with fresh parsley before serving.

Notes

For substitutions, green olives or capers can be used instead of Kalamata olives. Fresh herbs like dill or basil can replace oregano for a unique flavor. To store leftovers, keep them in an airtight container in the refrigerator for up to two days; freeze for up to three months.
