Preparation
- In a bowl, whisk together olive oil, fresh lemon juice, garlic, oregano, salt, and pepper.
- Place the chicken breasts in a resealable plastic bag or dish, pouring the marinade over them. Seal or cover, and refrigerate for at least 30 minutes (or up to 4 hours for maximum flavor).
Cooking
- If grilling, preheat your grill to medium-high heat. If using a skillet, heat a tablespoon of olive oil over medium heat.
- Remove the chicken from the marinade, shaking off any excess. Grill or cook in the skillet for about 6-7 minutes on each side or until the chicken reaches an internal temperature of 165°F (75°C).
- Allow the chicken to rest for a few minutes, then garnish with freshly chopped parsley before serving.
Serving
- Serve with your favorite side dishes, such as Greek salad, roasted vegetables, fluffy couscous, or warm garlic bread.
