Preparation
  1. Start by boiling a pot of water. Add a pinch of salt and then pour in the orzo. Cook according to package instructions, usually about 8-10 minutes, until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.
  3. Pour in the vegetable broth (or water) along with lemon juice and zest. Bring the mixture to a gentle simmer.
  4. Stir in the cooked orzo and cherry tomatoes. Season with salt and pepper. Cook for another 2-3 minutes until everything is heated through.
  5. Remove the skillet from the heat and gently fold in the crumbled feta cheese and fresh herbs.
  6. Plate your Mediterranean-Inspired Greek Orzo while hot. Drizzle with a bit of olive oil and sprinkle some extra herbs if desired.

Notes

Tip: Always ensure your ingredients are Halal-certified. You can easily swap out or add ingredients such as olives, spinach, or grilled vegetables. Avoid overcooking the orzo, and add feta at the right time to maintain its crumbly texture.
