  • 1 pound ground beef Choose 80/20 for juiciness.
  • 1 medium onion, diced
  • 2 pieces bell peppers (any color), sliced
  • 2 cups zucchini, diced
  • 2 cloves garlic, minced
Seasonings
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • to taste Salt and pepper
For Cooking and Garnish
  • 1 tablespoon olive oil For cooking.
  • Fresh parsley, for garnish Optional.
  • Crumbled feta cheese (optional) Adds extra flavor.

Method
 

Preparation
  1. Begin by washing and chopping all your vegetables. Dice the onion, slice the bell peppers, and cube the zucchini.
  2. In a large skillet, heat about 1 tablespoon of olive oil over medium-high heat.
Cooking
  1. Add the ground beef to the skillet and cook until browned, about 5-7 minutes. Use a spatula to break it apart as it cooks.
  2. Stir in the diced onion and minced garlic. Cook until the onion is translucent, around 2-3 minutes.
  3. Add the bell peppers and zucchini to the pan. Stir everything together and sauté for an additional 5 minutes.
  4. Sprinkle in the dried oregano, paprika, salt, and pepper. Mix well and allow to sauté for another 2-3 minutes.
  5. Once everything is cooked to your liking, remove the skillet from heat. Garnish with fresh parsley and crumbled feta cheese before serving.
Serving
  1. Serve the stir-fry warm, and enjoy the goodness of your Mediterranean creation!

Notes

Consider serving with couscous or quinoa, and a light Greek salad for a complete meal. Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months.
