Ingredients
  

For the Sandwich
  • 4 slices slices of crusty bread (like sourdough or ciabatta) Choose sturdy bread to handle the filling's moisture.
  • 1 cup shredded mozzarella cheese Feel free to mix with other cheeses for added flavor.
  • ½ cup crumbled feta cheese
  • ¼ cup sun-dried tomatoes, chopped
  • ¼ cup olives, pitted and sliced (Kalamata or green)
  • 1 tablespoon fresh basil, chopped (or 1 teaspoon dried) Fresh herbs enhance flavor.
  • 2 tablespoons olive oil or butter, for grilling

Method
 

Preparation
  1. Preheat your skillet: Place a non-stick skillet over medium heat.
  2. Prepare the filling: In a bowl, combine mozzarella, feta, sun-dried tomatoes, olives, and basil. Mix well, and season with salt and pepper.
  3. Assemble the sandwich: Layer half the cheese mixture on one slice of bread, then top with another slice.
Grilling
  1. Add 1 tablespoon of olive oil or butter to the preheated skillet. Grill the sandwich for about 3-4 minutes until golden brown.
  2. Carefully flip the sandwich, add the remaining oil or butter, and grill for another 3-4 minutes until the second side is golden and the cheese is melted.
Serving
  1. Remove the sandwich from the skillet, let it cool for a minute, slice in half, and serve warm.

Notes

Best enjoyed fresh, but can be stored in an airtight container in the refrigerator for up to two days. Avoid microwaving for reheating to prevent sogginess.
