- Once the couscous is fluffed, add it to the vegetable mixture.

- In a small bowl, whisk together the olive oil and lemon juice. Pour over the couscous and veggies, then mix well.

- Stir in the feta cheese and fresh parsley. Season with salt and pepper to taste.

Notes
Feel free to swap out vegetables based on what you have on hand. For added flavor, use broth instead of water when cooking couscous. Add the feta cheese just before serving to maintain its texture. Store leftovers in an airtight container in the refrigerator for up to 3 days.
