Ingredients
  

Couscous Base
  • 1 cup couscous Fluffy and light, this is the base of the salad.
  • 1.5 cups boiling water Used to hydrate the couscous.
Vegetables
  • 1 cup cherry tomatoes, halved Adds sweetness and color.
  • 1 medium cucumber, diced Provides crunch.
  • 0.5 medium red onion, finely chopped Gives a sharp flavor.
  • 1 medium bell pepper, diced Any color can be used.
  • 0.25 cup kalamata olives, pitted and sliced Adds brininess.
Dressing and Toppings
  • 0.25 cup feta cheese, crumbled Adds creaminess.
  • 0.25 cup fresh parsley, chopped Fresh herbs brighten the dish.
  • 3 tablespoons olive oil For dressing.
  • 2 tablespoons lemon juice Adds acidity to balance flavors.
  • to taste salt and pepper Seasoning to enhance taste.

Method
 

Prepare the Couscous
  1. In a bowl, place the couscous and pour boiling water over it. Cover with a lid and let it sit for about 5 minutes until the water has absorbed. Fluff with a fork once ready.
Mix the Vegetables
  1. In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, bell pepper, and olives.
Combine Ingredients
  1. Once the couscous is fluffed, add it to the vegetable mixture.
Prepare the Dressing
  1. In a small bowl, whisk together the olive oil and lemon juice. Pour over the couscous and veggies, then mix well.
Finish with Flavor
  1. Stir in the feta cheese and fresh parsley. Season with salt and pepper to taste.
Serve and Enjoy
  1. Chill in the refrigerator for about 15 minutes before serving to allow flavors to meld.

Notes

Feel free to swap out vegetables based on what you have on hand. For added flavor, use broth instead of water when cooking couscous. Add the feta cheese just before serving to maintain its texture. Store leftovers in an airtight container in the refrigerator for up to 3 days.
