Ingredients

  • 1/2 cup extra-virgin olive oil
  • 1 none lemon, juiced
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • to taste none salt and pepper
  • 1/4 teaspoon red pepper flakes optional for a kick
For the Chicken
  • 4 pieces chicken breasts or preferred cut

Method
 

Marinade Preparation
  1. In a medium-sized mixing bowl, combine the olive oil, lemon juice, minced garlic, oregano, thyme, salt, pepper, and red pepper flakes (if using). Whisk together until well combined.
Chicken Preparation
  1. Place chicken breasts into a resealable plastic bag or a shallow dish.
  2. Pour the marinade over the chicken, ensuring each piece is fully coated.
  3. Seal the bag or cover the dish, then refrigerate for at least 30 minutes, or up to 8 hours for maximum flavor.
Cooking
  1. Preheat your grill, skillet, or oven.
  2. Cook the chicken through, reaching an internal temperature of 165°F, then let it rest for a few minutes before slicing and serving.

Notes

Marinate for a few hours or overnight for the best flavor. Adjust the herbs and spices based on your preferences. Use fresh herbs to enhance the dish. Store any leftovers in an airtight container in the refrigerator for up to 4 days. You can freeze the marinated chicken for up to 3 months.
