Ingredients
  

For the Chicken Marinade
  • 1 lb boneless skinless chicken thighs (or breasts for a leaner option)
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper, to taste
For the Creamy Feta Tzatziki
  • 1 cup Greek yogurt
  • ½ cup feta cheese, crumbled
  • 1 small cucumber, finely grated
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • Salt and pepper, to taste
  • 1 tablespoon fresh dill (optional) Add for extra flavor.
For the Gyros
  • 4 pieces Pita bread (store-bought or homemade)
  • 2 cups Fresh lettuce, chopped
  • 1 medium Tomato, diced
  • ½ medium Red onion, thinly sliced
  • Olives (optional, for extra flavor)

Method
 

Marinating the Chicken
  1. In a bowl, mix the olive oil, lemon juice, garlic, oregano, cumin, salt, and pepper. Add the chicken and coat it well. Let it marinate for at least 20 minutes (or overnight for maximum flavor).
Preparing the Tzatziki
  1. In another bowl, combine Greek yogurt, crumbled feta, grated cucumber, olive oil, garlic, salt, pepper, and dill (if using). Mix until smooth, then refrigerate to let the flavors meld.
Cooking the Chicken
  1. Grill or pan-sear the marinated chicken over medium-high heat for about 6-8 minutes per side—until it's fully cooked and has a nice, browned exterior.
Assembling the Gyros
  1. Warm your pita bread slightly. Slice the cooked chicken into strips. Layer the chicken on the pita, and add fresh lettuce, diced tomatoes, red onions, and a generous dollop of the creamy feta tzatziki. Wrap it up and enjoy!

Notes

You can replace the chicken with grilled vegetables or falafel for a vegetarian option. For best results, prep the tzatziki a day before to enhance its flavor. Avoid overcooking the chicken, and aim for an internal temperature of 165°F.
