Preparation
- Trim the chicken breasts and cut them into bite-sized pieces.
- In a bowl, combine the chicken pieces with 1 tablespoon of olive oil, garlic powder, dried oregano, lemon juice, salt, and pepper. Coat well.
Cooking
- In a large skillet over medium-high heat, add the remaining tablespoon of olive oil. Once hot, add the seasoned chicken pieces in a single layer. Sauté for about 5-7 minutes or until cooked through.
- Once the chicken is nearly done, add the broccoli florets to the skillet. Stir and cook for an additional 3-5 minutes until the broccoli is bright green and tender-crisp.
- Taste and adjust seasoning as desired, possibly adding extra lemon juice for brightness.
- Transfer the Mediterranean Chicken and Broccoli to a serving dish and enjoy warm.
Notes
Consider adding feta cheese or a drizzle of balsamic reduction for added flavor. Store leftovers in an airtight container for 3-4 days or freeze for up to 3 months. Reheat gently before serving.
