Main Ingredients
  • 2 pieces chicken breasts Trimmed and cut into bite-sized pieces.
  • 2 cups broccoli florets Fresh, for best results.
  • 2 tablespoons olive oil Divided into two tablespoons.
  • 1 teaspoon garlic powder For added flavor.
  • 1 teaspoon dried oregano Classic Mediterranean herb.
  • 1 piece lemon Juiced, for flavor.
  • to taste Salt and pepper For seasoning.

Method
 

Preparation
  1. Trim the chicken breasts and cut them into bite-sized pieces.
  2. In a bowl, combine the chicken pieces with 1 tablespoon of olive oil, garlic powder, dried oregano, lemon juice, salt, and pepper. Coat well.
Cooking
  1. In a large skillet over medium-high heat, add the remaining tablespoon of olive oil. Once hot, add the seasoned chicken pieces in a single layer. Sauté for about 5-7 minutes or until cooked through.
  2. Once the chicken is nearly done, add the broccoli florets to the skillet. Stir and cook for an additional 3-5 minutes until the broccoli is bright green and tender-crisp.
  3. Taste and adjust seasoning as desired, possibly adding extra lemon juice for brightness.
  4. Transfer the Mediterranean Chicken and Broccoli to a serving dish and enjoy warm.

Notes

Consider adding feta cheese or a drizzle of balsamic reduction for added flavor. Store leftovers in an airtight container for 3-4 days or freeze for up to 3 months. Reheat gently before serving.
