Ingredients
  

For the Marinade
  • 4 pieces boneless, skinless chicken breasts You can use chicken thighs for a juicier texture.
  • 1/4 cup olive oil Extra virgin olive oil is recommended.
  • 3 cloves garlic, minced
  • 1 piece lemon, juiced (and zested)
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt Adjust to taste.
  • Freshly ground black pepper (to taste)
For the Toppings
  • 1 cup cherry tomatoes, halved
  • 1 cup Kalamata olives, pitted and sliced
  • Fresh parsley for garnishing

Method
 

Preparation
  1. In a large bowl, whisk together olive oil, minced garlic, lemon juice, lemon zest, oregano, cumin, salt, and pepper.
  2. Add the chicken breasts and coat well. Cover and let marinate in the fridge for at least 20-30 minutes.
Cooking
  1. Preheat your grill or stovetop grill pan over medium-high heat.
  2. In a separate bowl, combine cherry tomatoes and olives, tossing them with a drizzle of olive oil, salt, and pepper.
  3. Once the grill is hot, place the marinated chicken breasts on it. Cook for about 6-7 minutes on each side or until the chicken is cooked through and golden brown.
  4. In the last minute of cooking, add the tomatoes and olives to the grill, allowing them to char slightly and warm up.
  5. Remove everything from the heat and plate the chicken, topped with the grilled vegetables and a sprinkle of fresh parsley.

Notes

If baking, cook at 400°F (200°C) for about 25-30 minutes until cooked through. Store leftovers in an airtight container for up to 3-4 days.
