Preparation
- In a large bowl, whisk together olive oil, minced garlic, lemon juice, lemon zest, oregano, cumin, salt, and pepper.
- Add the chicken breasts and coat well. Cover and let marinate in the fridge for at least 20-30 minutes.
Cooking
- Preheat your grill or stovetop grill pan over medium-high heat.
- In a separate bowl, combine cherry tomatoes and olives, tossing them with a drizzle of olive oil, salt, and pepper.
- Once the grill is hot, place the marinated chicken breasts on it. Cook for about 6-7 minutes on each side or until the chicken is cooked through and golden brown.
- In the last minute of cooking, add the tomatoes and olives to the grill, allowing them to char slightly and warm up.
- Remove everything from the heat and plate the chicken, topped with the grilled vegetables and a sprinkle of fresh parsley.
Notes
If baking, cook at 400°F (200°C) for about 25-30 minutes until cooked through. Store leftovers in an airtight container for up to 3-4 days.
