  • 4 large carrots, peeled and grated
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1/4 cup fresh parsley, finely chopped
  • 2 cloves garlic, minced

Method
 

Preparation
  1. Wash and peel the carrots. Grate them using a box grater or a food processor.
Mixing
  1. In a large mixing bowl, combine the grated carrots, minced garlic, and finely chopped parsley.
  2. In a small bowl, whisk together the olive oil, fresh lemon juice, salt, and black pepper until well mixed.
  3. Pour the dressing over your carrot mixture and toss gently to mix all ingredients until well coated.
Serving
  1. Taste and adjust seasoning with more lemon juice, garlic, or pepper if desired.
  2. Transfer onto a serving plate or bowl and enjoy immediately, or let it sit in the fridge for about 30 minutes to meld the flavors.

Notes

Substitute parsley with cilantro for a different flavor. Best served shortly after preparation for maximum freshness.
