Mediterranean Baked Tilapia with Tomatoes & Olives

Ingredients
  

  • 4 tilapia fillets
  • 2 cups cherry tomatoes halved
  • 1 cup Kalamata olives pitted and sliced
  • 3 cloves garlic minced
  • 1 lemon juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil or parsley for garnishing

Method
 

  1. Preheat Your Oven: Preheat your oven to 400°F (200°C) to prepare for baking.
  2. Prepare the Baking Dish: Lightly grease a baking dish with olive oil and place the tilapia fillets in the dish.
  3. Mix the Toppings: In a bowl, combine halved cherry tomatoes, sliced Kalamata olives, minced garlic, lemon juice, olive oil, salt, and pepper. Toss well to coat.
  4. Assemble the Dish: Pour the tomato and olive mixture evenly over the tilapia fillets.
  5. Bake: Place the dish in the preheated oven and bake for about 20-25 minutes, or until the tilapia is cooked through and flakes easily with a fork.
  6. Garnish and Serve: Remove the dish from the oven, garnish with freshly chopped basil or parsley, and serve immediately.
