Preparation
- Preheat your oven to 350°F (175°C).
- In a medium-sized ovenproof dish, add the cherry tomatoes. Drizzle with olive oil, sprinkle with salt, pepper, and dried oregano. Toss to coat.
- Crumble feta cheese atop the tomatoes, allowing the cheese to nestle into the mixture.
- Make four wells in the cheese-tomato mixture, spaced evenly.
- Carefully crack an egg into each well without breaking the yolks. Sprinkle additional salt and pepper on top.
- Transfer the dish to the preheated oven and bake for about 20-25 minutes, or until egg whites are set but yolks are runny.
- Sprinkle with freshly chopped basil before serving.
Notes
For a Halal option, substitute feta with goat cheese. You can also add bell peppers or onions for extra flavor. Store leftovers in an airtight container for up to 3 days.
