  • 4 large large eggs
  • 200 g feta cheese Can substitute with goat cheese.
  • 1 cup cherry tomatoes Use fresh tomatoes for best flavor.
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish Add just before serving.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium-sized ovenproof dish, add the cherry tomatoes. Drizzle with olive oil, sprinkle with salt, pepper, and dried oregano. Toss to coat.
  3. Crumble feta cheese atop the tomatoes, allowing the cheese to nestle into the mixture.
  4. Make four wells in the cheese-tomato mixture, spaced evenly.
  5. Carefully crack an egg into each well without breaking the yolks. Sprinkle additional salt and pepper on top.
  6. Transfer the dish to the preheated oven and bake for about 20-25 minutes, or until egg whites are set but yolks are runny.
  7. Sprinkle with freshly chopped basil before serving.

Notes

For a Halal option, substitute feta with goat cheese. You can also add bell peppers or onions for extra flavor. Store leftovers in an airtight container for up to 3 days.
