Preparation
- Preheat the oven to 375°F (190°C).
- In a medium baking dish, drizzle the olive oil to coat the bottom.
- Scatter the halved cherry tomatoes and diced bell peppers evenly across the dish.
- Crumble the feta cheese into chunks and place them among the veggies.
- Sprinkle the chopped spinach over the dish.
- Sprinkle the oregano, salt, and pepper over the dish.
- Create little wells for each egg and gently crack the eggs into their spots.
- Bake for about 20-25 minutes, until the egg whites are set and yolks are to your liking.
- Remove from the oven and let cool slightly before serving.
Notes
Store leftovers in an airtight container for up to 3 days. Reheat in the oven, not the microwave.
