Main Ingredients
  • 200 g feta cheese Crumble before adding.
  • 4 large eggs Free-range if possible.
  • 2 tbsp olive oil For greasing the baking dish.
  • 1 cup cherry tomatoes Halved.
  • 1 piece bell pepper Diced (red or yellow for color).
  • 1 cup fresh spinach Roughly chopped.
  • 1 tsp dried oregano For seasoning.
  • to taste salt For seasoning.
  • to taste pepper For seasoning.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a medium baking dish, drizzle the olive oil to coat the bottom.
  3. Scatter the halved cherry tomatoes and diced bell peppers evenly across the dish.
  4. Crumble the feta cheese into chunks and place them among the veggies.
  5. Sprinkle the chopped spinach over the dish.
  6. Sprinkle the oregano, salt, and pepper over the dish.
  7. Create little wells for each egg and gently crack the eggs into their spots.
  8. Bake for about 20-25 minutes, until the egg whites are set and yolks are to your liking.
  9. Remove from the oven and let cool slightly before serving.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat in the oven, not the microwave.
