Meatless Baked Ziti

Ingredients
  

Pasta and Sauces
  • 12 oz ziti pasta Use any tube-shaped pasta if ziti is not available.
  • 2 cups marinara sauce Homemade or store-bought.
  • 1 cup ricotta cheese For creaminess.
Cheeses
  • 2 cups mozzarella cheese, shredded Can be adjusted based on preference.
  • 1/2 cup Parmesan cheese, grated Adds a sharp flavor.
Vegetables and Seasoning
  • 1 cup spinach, chopped Can substitute with other leafy greens if desired.
  • 1 teaspoon Italian seasoning For added flavor.
  • to taste Salt and pepper Season as preferred.
Additional Ingredients
  • 2 tablespoons Olive oil To drizzle over the top for crispiness.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Bring water to a boil in a large pot and cook the ziti according to the package instructions. Once done, drain and set aside.
  3. In a large bowl, combine the cooked ziti, marinara sauce, ricotta cheese, chopped spinach, Italian seasoning, salt, and pepper. Stir until well combined.
Layering
  1. In a greased baking dish, spread half of the ziti mixture evenly, then sprinkle half of the mozzarella and Parmesan cheese on top.
  2. Add the remaining ziti mixture on top and finish with the rest of the mozzarella and Parmesan cheese.
  3. Drizzle olive oil over the top.
Baking
  1. Cover the baking dish with foil and bake for 25 minutes.
  2. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbling and golden brown.
  3. Allow to cool slightly before serving.

Notes

For variations, consider adding fresh herbs like basil or spices such as red pepper flakes. Store leftovers in an airtight container for 3-5 days, or freeze for up to 3 months.
