Ingredients
  

Meatball Ingredients
  • 1 lb ground beef Can substitute with ground turkey or chicken.
  • 1 large egg
  • 1/3 cup breadcrumbs
  • Salt to taste
  • Pepper to taste
Assembly Ingredients
  • Marinara sauce
  • Mozzarella cheese
  • Bread or hollowed-out zucchini for serving

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground beef, egg, breadcrumbs, salt, and pepper. Mix until well combined.
  3. Form the mixture into small meatballs, about 1 inch in diameter.
Baking
  1. Place the meatballs in a baking dish and bake them in the oven for about 20 minutes, or until they are fully cooked through.
  2. While the meatballs are baking, prepare your bread or hollowed-out zucchini boats.
Assembly
  1. Once the meatballs are done, place them inside the bread or zucchini, topping each with marinara sauce and a sprinkle of mozzarella cheese.
  2. Return the assembled boats to the oven and bake for an additional 10 minutes, until the cheese is melted and bubbly.
  3. Take them out of the oven, let them cool slightly, and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For freezing, wrap each boat tightly before placing them in a freezer-safe bag. Reheat in the microwave or oven, covering with foil to prevent drying out.
