  • 1 cup sugar
  • 1/4 cup light corn syrup Can be substituted with agave or maple syrup for a vegan version.
  • 1/4 cup water
  • 1/2 cup toasted black sesame seeds
  • 2 tablespoons matcha powder
  • 1 cup chopped nuts (almonds, cashews, or peanuts) Choose your favorite nuts or experiment with different varieties.
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Grease a baking sheet or line it with parchment paper to prevent sticking.
  2. In a medium saucepan, combine sugar, corn syrup, and water. Stir gently over medium heat until sugar dissolves.
  3. Allow the mixture to boil without stirring until it reaches a soft ball stage (about 240°F or 115°C). Use a candy thermometer for accuracy.
  4. Remove from heat and stir in black sesame seeds, matcha powder, chopped nuts, salt, and vanilla extract until well-blended.
  5. Immediately pour the nougat mixture onto the prepared baking sheet. Spread evenly to your desired thickness.
  6. Let it cool at room temperature until firm (approximately 2-3 hours).
  7. Once cooled and firm, cut into squares or rectangles and store in an airtight container.

Notes

For a twist, sprinkle extra black sesame seeds or drizzle honey on top. You can also dip them in dark chocolate for a more indulgent treat. Store properly to maintain chewiness.
