  • 2 cups prepared mashed potatoes preferably leftover
  • 1 cup shredded cheese cheddar or your choice
  • 1 large egg
  • 1/2 cup breadcrumbs seasoned for extra flavor
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the prepared mashed potatoes, shredded cheese, egg, and a pinch of salt and pepper. Mix until thoroughly combined.
  3. Using your hands, scoop out approximately 2 tablespoons of the mixture, rolling it into a ball or forming it into a small patty.
  4. Roll each potato ball in the breadcrumbs until evenly coated.
Baking
  1. Place the coated puffs on a baking sheet lined with parchment paper, spacing them apart.
  2. Bake them in the preheated oven for 20-25 minutes, or until they are golden brown and crispy.
Serving
  1. Remove from the oven and allow them to cool for a minute. Serve hot with your favorite dipping sauce or toppings.

Notes

Customize these puffs with toppings like chives, sour cream, or hot sauce. Store leftovers in an airtight container in the refrigerator for up to three days, or freeze for longer storage. Reheat in the oven at 350°F (175°C) for about 10-12 minutes.
