Preparation
- Start by trimming any excess fat from the chicken breasts. Season them with salt and pepper.
- In a large pot, heat the olive oil over medium heat. Add chopped onions and cook until they’re translucent (about 3-4 minutes). Then stir in the minced garlic and sauté for another minute until fragrant.
- Add the chicken breasts to the pot and cook for about 5-7 minutes per side until they are golden brown.
- Pour in the chicken broth and add the diced tomatoes along with the Italian seasoning. Bring to a boil.
- Once boiling, reduce the heat to low and simmer for about 20 minutes or until the chicken is fully cooked.
- Remove the chicken and use two forks to shred it into bite-sized pieces.
- Return the shredded chicken to the pot and stir in the heavy cream. Allow it to heat through for an additional 5 minutes.

Notes
