  • 2 cups butter beans (canned, drained and rinsed)
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

Preparation
  1. In a large skillet, heat the olive oil over medium heat. Once hot, add the diced onion and sauté until translucent, about 4–5 minutes.
  2. Stir in the minced garlic and cook for an additional minute, until fragrant.
  3. Sprinkle the smoked paprika over the onion and garlic mixture, stirring continuously for about 30 seconds to bring out its flavor.
  4. Add the butter beans to the skillet, gently stirring to combine with the onion, garlic, and spices. Cook for about 5-7 minutes, allowing the beans to warm through and absorb the flavors.
  5. Season with salt and pepper to taste.
  6. Once the butter beans are heated through and coated with flavor, remove from heat. Transfer to a serving bowl and garnish with freshly chopped parsley before serving.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to a month. Reheat gently on the stove with a splash of water or olive oil.
