- In a large skillet, heat the olive oil over medium heat. Once hot, add the diced onion and sauté until translucent, about 4–5 minutes.
- Stir in the minced garlic and cook for an additional minute, until fragrant.
- Sprinkle the smoked paprika over the onion and garlic mixture, stirring continuously for about 30 seconds to bring out its flavor.
- Add the butter beans to the skillet, gently stirring to combine with the onion, garlic, and spices. Cook for about 5-7 minutes, allowing the beans to warm through and absorb the flavors.
- Season with salt and pepper to taste.
- Once the butter beans are heated through and coated with flavor, remove from heat. Transfer to a serving bowl and garnish with freshly chopped parsley before serving.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to a month. Reheat gently on the stove with a splash of water or olive oil.
