  • 8 ounces feta cheese, cubed (or any Halal-friendly cheese of choice) Can substitute with mozzarella or goat cheese.
  • ½ cup extra virgin olive oil For rich flavor.
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • 2 cloves garlic, minced
  • ½ teaspoon red chili flakes (optional) For a kick.
  • 1 lemon zest, from 1 lemon
  • 2 tablespoons fresh parsley, chopped For garnish.

Method
 

Preparation
  1. Start by cutting your cheese into bite-sized cubes. If using a block of feta, crumble it gently with a fork if you prefer such texture.
  2. In a medium bowl, whisk together the olive oil, herbs (oregano and basil), minced garlic, lemon zest, and salt and pepper.
  3. Add the cheese to the marinade. Gently toss until all the cheese cubes are well-coated with the mixture.
  4. If you like your appetizers with a little heat, sprinkle in the red chili flakes and mix again.
  5. Transfer the cheese mixture into a glass jar or airtight container. Allow it to marinate in the refrigerator for at least 30 minutes for the flavors to meld. For maximum taste, let it marinate overnight.
  6. Before serving, sprinkle with fresh parsley for a pop of color. Pair it with crusty bread, crackers, or fresh vegetables for dipping.

Notes

For a different flavor profile, try using mozzarella or goat cheese as substitutions. The longer the cheese marinates, the more flavorful it becomes. Ensure all cheese options are Halal compliant. Store leftovers in the refrigerator for up to a week.
