- Start by cutting your cheese into bite-sized cubes. If using a block of feta, crumble it gently with a fork if you prefer such texture.
- In a medium bowl, whisk together the olive oil, herbs (oregano and basil), minced garlic, lemon zest, and salt and pepper.
- Add the cheese to the marinade. Gently toss until all the cheese cubes are well-coated with the mixture.
- If you like your appetizers with a little heat, sprinkle in the red chili flakes and mix again.
- Transfer the cheese mixture into a glass jar or airtight container. Allow it to marinate in the refrigerator for at least 30 minutes for the flavors to meld. For maximum taste, let it marinate overnight.
- Before serving, sprinkle with fresh parsley for a pop of color. Pair it with crusty bread, crackers, or fresh vegetables for dipping.
