  • 2 cups butternut squash, peeled and cubed
  • 2 cups Brussels sprouts, halved
  • 3 tablespoons olive oil
  • 2 tablespoons pure maple syrup
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Cut each chicken sausage into bite-sized pieces.
  3. In a large bowl, combine butternut squash and Brussels sprouts. Drizzle with olive oil, maple syrup, garlic powder, onion powder, salt, and pepper. Toss until everything is evenly coated.
  4. Spread the vegetable mixture evenly on a large baking sheet. Scatter the chicken sausage pieces on top.
  5. Bake in the preheated oven for about 25-30 minutes or until veggies are tender and slightly caramelized, stirring halfway through.
  6. Remove from the oven and let it cool slightly. Sprinkle with fresh parsley before serving.

Notes

Substitutions: You can swap chicken sausage for turkey or plant-based sausage. Use different seasonal veggies based on preference. Ensure the baking sheet is not overcrowded to avoid steaming.
