Preparation
- Preheat your oven to 400°F (200°C).
- Cut each chicken sausage into bite-sized pieces.
- In a large bowl, combine butternut squash and Brussels sprouts. Drizzle with olive oil, maple syrup, garlic powder, onion powder, salt, and pepper. Toss until everything is evenly coated.
- Spread the vegetable mixture evenly on a large baking sheet. Scatter the chicken sausage pieces on top.
- Bake in the preheated oven for about 25-30 minutes or until veggies are tender and slightly caramelized, stirring halfway through.
- Remove from the oven and let it cool slightly. Sprinkle with fresh parsley before serving.

Substitutions: You can swap chicken sausage for turkey or plant-based sausage. Use different seasonal veggies based on preference. Ensure the baking sheet is not overcrowded to avoid steaming.
