  2. Peel and chop the sweet potatoes into 1-inch cubes. Slice the carrots into thick rounds. Ensure consistent chopping for even cooking.
  3. In a bowl, whisk together the maple syrup, olive oil, salt, pepper, and thyme until combined.
Cooking
  1. Place the sweet potatoes and carrots in a large mixing bowl and toss with the maple syrup mixture until evenly coated.
  2. Spread the coated vegetables on a parchment-lined baking tray. Roast in the oven for 25-30 minutes, flipping halfway through, until tender and caramelized.
