  • 1 medium pumpkin, peeled and cubed
  • 3 tablespoons olive oil
  • 3 tablespoons maple syrup
  • to taste Salt and pepper
  • 1 cup crumbled feta cheese
  • Fresh thyme (for garnish) Optional

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the pumpkin into approximately 1-inch cubes.
  3. In a large mixing bowl, combine cubed pumpkin with olive oil, maple syrup, salt, and pepper. Toss until evenly coated.
  4. Spread the seasoned pumpkin cubes in a single layer on a baking sheet.
Cooking
  1. Roast in the preheated oven for about 25-30 minutes, or until tender and caramelized.
  2. In the last 5 minutes, sprinkle crumbled feta cheese over the pumpkin and return to the oven.
  3. Once roasting is done, garnish with fresh thyme if desired and serve.

Notes

For an alternative, butternut squash works as an excellent substitute for pumpkin. Store leftovers in an airtight container in the refrigerator for up to 3 days.
