Ingredients

  • 2 medium beets, peeled and cubed
  • 4 large carrots, sliced into sticks
Seasoning and Liquid
  • 3 tablespoons pure maple syrup Can substitute with honey or agave syrup.
  • 2 tablespoons olive oil
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon black pepper

Preparation
  1. Preheat the Oven: Set your oven to 400°F (200°C) and let it warm up while you prepare the veggies.
  2. Prepare the Vegetables: Start by peeling and cubing the beets. Then, wash and slice the carrots into uniform sticks to ensure even roasting.
Mixing and Roasting
  1. Mix Ingredients: In a large bowl, combine the cubed beets and sliced carrots. Drizzle the olive oil and maple syrup over them. Sprinkle salt and black pepper. Toss everything together until the vegetables are well coated.
  2. Spread on Baking Sheet: Lay the mixed veggies in a single layer on a baking sheet lined with parchment paper to help them roast evenly.
  3. Roast in the Oven: Place the baking sheet into the preheated oven. Roast for 30-35 minutes, tossing halfway through to ensure even cooking. Look for caramelization on the edges for extra flavor!

Notes
