Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the pumpkin puree, maple syrup, vegetable oil, and eggs. Whisk until smooth.
- In a separate bowl, mix together the all-purpose flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the chopped walnuts or pecans if desired.
Baking
- Pour the batter into a greased loaf pan and smooth the top.
- Bake for about 60 minutes, or until a toothpick inserted into the center comes out clean. Cover with aluminum foil if the top browns too quickly.
Cooling
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
Store any leftover Maple Pumpkin Bread in an airtight container at room temperature for up to 3 days, or freeze slices for up to 3 months. Reheat slices in the microwave for 15–20 seconds or toast with extra maple syrup.
