  1. Start by gently slicing each Medjool date lengthwise on one side, creating an opening. Remove the pit and set the dates aside.
  2. In a bowl, combine the mascarpone cheese, 2 tablespoons of maple syrup, vanilla extract, and a pinch of sea salt. Mix until everything is beautifully smooth and well combined.
  3. Using either a small spoon or a piping bag, fill each date with the mascarpone mixture. Be generous; don’t hold back!
  4. Once all the dates are filled, arrange them on a serving platter. Drizzle with extra maple syrup and sprinkle with chopped nuts if desired for additional texture and flavor.
  5. Serve immediately or refrigerate for a short while to allow the flavors to meld. Enjoy!

Notes

Store any leftovers in an airtight container in the fridge for up to four days. These dates are delicious cold! You can also prepare the filling ahead of time and assemble the dates just before serving.
